Well it doesn't have to be just Bitcoin, it could be Monero or Zcash.
No system is perfect but even snailmail has its risks such as local postmarks.

Bitcoin isn't that anonymous as you point out but I'm personally not too worried about someone tracking my crypto payments. I'm happy with cash in the post though although it's not always convenient outside of the destination country.
