The issue with weight is not about distribution inside the plane. It is about how much fuel it takes to lift off and land. Beware too, that weight is your own weight plus that of your luggage. Hence, for instance, excess luggage charges, or why mail and delivery companies charge your package by weight.

And it is no more discriminatory than charging children differently, or charging regular customers differently, or charging the same flight differently for those for whom it is only one stage of several, rather than "the only flight". All of those are policies that have some commercial sense, but are also discriminatory. The only reason why weight is not used is really because, as I said, it becomes impossible to quote a price if you don't weight the person first.
